Have you all awakened from your food-induced comas yet? We went from a potential full house for Thanksgiving to just our family, so this was my first time cooking Thanksgiving dinner all by myself. I feel like I was on my feet and working from 9-5, but it was worth it. I know it sounds silly, but I'm really proud of myself. It was one of my yummiest Thanksgiving dinners ever! It tasted just like Mom's--even though it was gluten free. Yeah!  I skipped the pie and created a yummy peppermint treat that I will be sharing on Monday.   (I'll tackle gluten-free pie next year!)
