I'm super excited to share my blog today with Rachel, from {I Love} My Disorganized Life. Rachel is one of the kindest bloggers I know, and she has an awesome site. Maybe I like it so much because I relate so well with its name! I've been back from vacation for five days--returning just in time to have company with lots of little kids. Disorganized (with a large helping of crazy) definitely describes my life right now!

Flourless Chocolate Cake
Hello, I'm Rachel, author and creator at {i love} my disorganized life. I can't tell you how excited I am to be here sharing with you today! First, a little about myself: I have been married to my wonderful husband, Mark, for 22 years. We have five children {ages 21, 20,18, 16 & 11} and two grand children {ages 1& 2}. We are all dog lovers in my house and have been breeding Golden Retrievers for the last thirteen years. I started my blog shortly after I left my retail management job to be a full-time SAHM. I guess you could say my blog is a creative-outlet-turned-full-time-adventure. I post mainly recipes, but have been doing more craft and sewing projects and plan to continue that trend. I am also a contributor at Around My Family Table, which helps to stretch me creatively.
When I found out that one of Heidi's daughters is gluten-free, I could totally relate. One of my sisters is gluten-free, and over the past several years I could see what a challenge it could be for her sometimes. If we went to lunch, we had to be sure the restaurant had gluten-free options, she has to read the label of everything she buys, and has had to learn to find ingredient substitutes for her favorite recipes.
With that in mind, I did something special for you today. I always want to make something absolutely delicious, but keeping Heidi's daughter in mind, I also wanted to make something that their whole family could enjoy. I made something that I have never made before {there I go being stretched again}, but have always wanted to.
Flourless Chocolate Cake. Rich, decadent, creamy deliciousness. That's what this cake is all about. A little definitely goes a long way, but you certainly won't be able to keep yourself from having seconds.
Here's all you need:
For the cake:
- 4 oz bittersweet chocolate, chopped
- 1 stick cold butter
- 1 teaspoon vanilla
- 2 oz coffee liqueur
- ¾ C sugar
- ½ C cocoa powder, sifted
- 3 eggs, beaten
- Berries and powdered sugar for garnish
For the ganache:
- 4 oz semi sweet chocolate, chopped
- ½ C heavy cream
Here's all you do:
For the cake:
- Preheat oven to 375°
- Spray an 8" round cake pan with non-stick cooking spray; line bottom of pan with parchment paper
- Melt chocolate, butter, vanilla and coffee liqueur in a double boiler, stirring often until smooth
- Remove from heat and put bowl in an 'ice bath' {this will prevent eggs from cooking when added}
- Mix in sugar & cocoa powder; stir in beaten eggs until well combined
- Pour batter into prepared pan and bake on a sheet tray for 20-25 min
- Remove cake from oven and invert onto cooling rack {you can also turn directly onto a serving platter, as it is difficult to transfer later}
For the ganache:
- Put chocolate in a medium-sized bowl.
- Heat the cream on stove in a small pan, over low heat, until hot
- Pour cream over chocolate and stir until melted and smooth
- Pour ganache over cake
- Top with berries and powdered sugar before serving

I have a similar French recipe, but it includes ground almonds and hazelnuts.
