Whew! We made it through Halloween! I hope you had a great day yesterday with your family, friends, and/or kiddos. If you didn't already know, I have been long-term substitute teaching in kindergarten. It's been a while since I've been in the classroom on Halloween, and it is a lot of work! The kiddos all looked awesome, and I'm guessing that today they will either be in sugar-induced comas or bouncing off the walls. We'll see . . .

Hello, One Creative Mommy Readers! I am Lisa from Over the Big Moon, where we blog about…well everything! From learning printables to home décor and holidays to recipes. Today I want to share the most delicious pumpkin recipe I have tried yet--Gooey Pumpkin Cake! The best part is that it's super easy!
Here is what you need:
- 1 – 15 oz can of canned pumpkin
- 1 - 12 oz can of evaporated milk
- 3 eggs
- 1 cup sugar
- 1 teaspoon cinnamon
- 1 box Spice cake mix
- ½ cup butter
Preheat your oven to 350 and grease a 9x13 pan. Combine all ingredients except the cake mix and butter. The pumpkin mix might seem a little runny, but that it how it is supposed to be. Pour into 9x13 pan.
Sprinkle cake mix over pumpkin.
You can either melt and drizzle butter over the top, or you can cut the butter into thin pieces and put it over the whole cake mix. You don’t have to mix the butter in. It will melt into the cake mix.
Bake for 55-60 minutes. Serve warm with ice cream or whipped cream. Drizzle with caramel for a little extra yum!
