One of my favorite things about Christmas is having Christmas breakfast with my Dad. It’s a tradition I still cherish today. This year I thought I would whip up a yummy vegan tofu scramble.
Perfectly seasoned tofu with lots of veggies makes the perfect Christmas breakfast and gives you energy for a long Christmas day.

I'll share this tutorial in just a minute, but first . . . . In light of the recent events in Connecticut, I hope you all had plenty of chances to hug your children yesterday. My thoughts and prayers are with the people of Newton. Who could have imagined such a horrible tragedy? Like you, I feel so helpless, and I wish I could do something to help. Several bloggers are putting their heads together to think of something. I'll let you know details as I find out.
On a happier note, I'm excited to welcome my next guest--Meredith, from Wait 'Til Your Father Gets Home!
